When Rebecca Campbell moved to Santa Cruz in 1982, she was hard-pressed to find a bran muffin she could eat – not because she was a finicky eater, or a health food fanatic, but because she had lost a kidney and had to be extremely concerned about what she ate. High fiber, low sugar and low cholesterol in her diet were a must. Since she couldn’t find a good muffin, she started baking her own. After tasting one of her muffin creations, a friend urged her to go into business. By 1983, Rebecca was turning out 100 muffins a day in her own kitchen, selling them to the Food Bin and other health food stores around town.

In September 1986, Rebecca opened her first retail facility to a grateful Santa Cruz public. From her flagship location on Front Street, Rebecca and her dedicated crew of local bakers, delivery drivers and friendly staff, faithfully served up her now famous Mighty Muffins™ and other healthy indulgences to the downtown breakfast and lunch crowds.

Her impressive list of accomplishments includes a successful wholesale business (with annual revenues over $3 million) providing more than 5,000 muffins, scones and cookies a day to Northern California clients such as Safeway and Whole Foods Market. Rebecca’s has been featured numerous times by the local media, as well as nods from prestigious national food journals like Gourmet Magazine.

 

Despite her relative success, Rebecca found herself at a crossroads. While many in the business world worship size and constant growth, Rebecca was growing more disillusioned with the typical model and its heavy demands on her personal life and relationships. She longed for a return to the ideals on which the original business had been founded. She began to explore small-enterprise options that could offer her the advantages she was looking for, on a more life-serving and human scale.

Together, Campbell and her associates share a single-minded pursuit of quality, with an emphasis on safer, better tasting, and more environmentally friendly convenience foods. Through conscientious vendor selection and integrity-based community relationships, they will continue to fulfill their promise of second-to-none product quality and service in a way that best serves the needs of their customers and enhances their communities for the benefit of all.
